Bread--It was just a recipe from my bread machine book made in said machine. Not much to say about that.
Greek Salad--That was from a box of Suddenly Salad. I did add feta cheese to it, which I highly recommend. There is probably a great recipe out there. allrecipes.com is one of my favorite sites ever. But again, not much to say tehre.
Tilapia--Now this I DO have a recipe for it, and it is amazing. Tilapia is a kind of bland fish to me. A friend gave me some before moving, and I have been trying ever since to find a good recipe for it. I sure I found this one sooner!
I think it would also work well with the healthier (but MUCH more expensive) salmon. I just found out 2 seconds ago that tilapia is actually a fatty fish and not that good for you...kinda takes the wind out of my sales a bit. But I did find this recipe in the Healthy Cooking magazine, so hopefully it's not too bad. Anyway, I'm rambling. As usual. Here's the recipe.
6 tilapia fillets 4 tsp. butter
1 egg 1 cup crumbled tomato and basil feta cheese
1/3 cup fat-free milk 1/4 ts. cayenne pepper (I used crushed red pepper)
1 large tomato, seeded and chopped 1/4 cup chopped ripe olives
1 Tbsp. minced fresh parsley 1 Tbsp. lemon juice
1/8 tsp. pepper
1/4 cup pine nuts, toasted (I forgot to toast them and it was fine. You can find these with all the other nuts usually in the baking aisle. Kinda pricey but VERY yummy.)
1. In a large skillet, brown fish in butter in batches. Transfer to a 15 in. x 10 in. baking pan coated with cooking spray. (That seems awfully specific to me. I just used a cookie sheet. I'm sure a casserole dish would work too.)
2. In a small bowl, combine the egg, cheese, milk, and cayenne; spoon over fish. Sprinkle with tomato, olives and pine nuts. Bake, uncovered, at 425 for 10-15 minutes or until fish flakes easily with a fork.
3. In a small bowl, combine the parsley, lemon juice, and pepper; drizzle over fish.
This recipe is SOOOOOO easy. I seriously recommend you try it!
