A Food Blog?

Contrary to photo evidence, I have no intention of turning this into a food blog.  I don't have anything to add to that world.  In fact, many of my recipes come from well-established blogs (skinnytaste being my favorite).  But I did have a couple of requests for follow-up from our CSA adventures.  Here's the first.

The above picture is of cabbage and pierogies.  If you've never had a pierogi, you're really missing out.  They are potatoes and often another ingredient such as cheese or sour cream stuffed in a pasta shell.  Hello, starch!  They are much like ravioli and absolutely delicious.  A roommate made them for me once, and I have loved them ever since even if I don't eat them often.  So when I was searching for cabbage recipes and saw one with pierogies, I jumped at it.

Pierogies with Cabbage 
This recipe is easily adapted for however many people you want it to feed.  I didn't measure anything.
Pierogies (in the freezer section of the store with the pasta)
Bacon
Cabbage (We used half a head for 2 people and that seemed about right)
Green onion (Original recipe called for regular onion but we had green from the CSA so we used that)
Garlic
Salt
Pepper
Cook the bacon until it's cripsy.  Sautee cabbage, green onion, garlic, salt, and pepper in the bacon grease until cabbage is tender.  Cook pierogies according to directions on the package--I boiled them.  Top pierogies with cabbage mixture and enjoy!  I thought I would need a sauce too, but really everything is tasty as is.

The other CSA recipe we made was a spinach quiche.  It was really quite yummy, but then I love quiche and it's just a basic recipe.  The one thing I didn't like was the use of Swiss cheese.  I should have known better as I have tried it multiple times before, but I thought maybe with the other flavors in the quiche I'd like it.  Nope.  Next time it will definitely be cheddar!  Other than that, we have had two successful CSA dinners so far.  Not sure they were particularly healthy, which is one of our goals on this endeavor, but I definitely got to eat something tonight that I wouldn't have normally had and that was my main goal.  Healthy will come.  :)

  1. That looks delicious! Whenever I get a head of cabbage, I only end up using half of it. Well now I've got a use for the other half! And considering I often have pierogies in my freezer (they really are delicious, aren't they?), this would be a quick, easy meal that doesn't require an extra trip to the store. Thanks for sharing it!
